For the past few days I was helped by my better half to export all of my entries to a new domain and hosting (well…actually the particular person was… and stil is the one who did all the hard work!). I have always wanted to have my own website cum blog to not only depend on the free ones. Well my dream really did come true…when my better half got me one…and it came to me as a surprise as I am pretty confident that the D day of ‘moving’ would come but not this soon!

Thank you really much for this! Alhamdulillah…

Even though I am not that computer ‘advanced’, you were always there to help, to teach and to answer all my endless questions about ‘tis and tat’ (seems that you really need to paraphrase your sentences into simpler words that can be understood by me each time). Really appreciate your effort…and it motivates me to contribute more…insyaAllah…

As for today ‘the secret move’ is finished and you will no more find any updates or issues of me from this blog (going to miss this domain so much…as it holds up many memories for me). You’ll still find the old entries there and the theme will be more or less the same. But…I have no regrets as this small ‘hijra’ will still benefits others.

And now this site will be the memoir of ‘Ibunoor’s tears of the heaven (I)’.

Please do visit me at http://www.ibunoor.com/ as of today. See you there!

Eggplant, or aubergine as it is called in France, is a vegetable long prized for its beauty as well as its unique taste and texture. Eggplants belong to the plant family of Solanaceae, also commonly known as nightshades, and are kin to the tomato, bell pepper and potato. Eggplants grow in a manner much like tomatoes, hanging from the vines of a plant that grows several feet in height.

One of the most popular varieties of eggplant in North America looks like a pear-shaped egg, a characteristic from which its name is derived. The skin is glossy and deep purple in color, while the flesh is cream colored and spongy in consistency. Contained within the flesh are seeds arranged in a conical pattern.

In addition to this variety, eggplant is also available in a cornucopia of other colors including lavender, jade green, orange, and yellow-white, as well as in sizes and shapes that range from that of a small tomato to a large zucchini.

While the different varieties do vary slightly in taste and texture, one can generally describe the eggplant as having a pleasantly bitter taste and spongy texture. In many recipes, eggplant fulfills the role of being a complementary ingredient that balances the surrounding flavors of the other more pronounced ingredients.

To enjoy eggplants the asian style, why don’t you try this 2 steps eggplant with dried shrimps and chilli recipe.

Ingredients:

2 cloves of pressed, roughly chopped garlic

1 bulb of medium size roughly, sliced onion

3 table spoon of soaked, cleaned dried shrimps

1 ladle of fried, grounded homemade dried red chilli paste

About 1 inch cube of dried shrimp paste (belachan)

5 small size cut longitudinal purple eggplants

Method:

To prepare the chilli paste…

1) Cut about 15 dried red chilli into 2 (with scissors), throw the seeds away and wash them (the dried red chilli).

2) Toss them aside and dried them a little.

3) Heat 3 teaspoon of oil in the pan and fried the dried red chilli for a few minutes till it fragrance.

4) Toss them aside to let them cool.

5) Add the fried, dried red chilli and shrimp paste (belachan) with some water into the grinder and grind them to a smooth texture making it a paste.

To prepare this recipe…

1) Deep fried the cut brinjal till the purple colour turn brown in a pan and then toss it aside.

2) Take another new pan and heat 3 tablespoon of oil.

3) Saute’ the garlic and onion till brown and fragrance.

4) Next, add the dried shrimps and fried it for 1 minute.

5) Then, add the chilli paste that we prepared and cook it till it become thick.

6) Place the deep fried brinjal in and cook it for another 1 minute.

7) Season to taste and voila… its ready to be served!

When cutting an eggplant, use a stainless steel knife as carbon steel will react with its phytonutrients and cause it to turn black. Wash the eggplant first and then cut off the ends. Most eggplants can be eaten either with or without their skin. However, the larger ones and those that are white in color generally have tough skins that may not be palatable. To remove skin, you can peel it before cutting or if you are baking it, you can scoop out the flesh once it is cooked.

To tenderize the flesh’s texture and reduce some of its naturally occurring bitter taste, you can sweat the eggplant by salting it. After cutting the eggplant into the desired size and shape, sprinkle it with salt and allow it to rest for about 30 minutes. This process will pull out some of its water content and make it less permeable to absorbing any oil used in cooking.

Rinsing the eggplant after “sweating” will remove most of the salt. Eggplant can be baked, roasted in the oven, or steamed. If baking it whole, pierce the eggplant several times with a fork to make small holes for the steam to escape. Bake at 350 degrees Fahrenheit (about 177 degrees Celsius) for 15 to 25 minutes, depending upon size. You can test for its readiness by gently inserting a knife or fork to see if it passes through easily.

Health Benefits

In addition to featuring a host of vitamins and minerals, eggplant also contains important phytonutrients, many which have antioxidant activity. Phytonutrients contained in eggplant include phenolic compounds, such caffeic and chlorogenic acid, and flavonoids, such as nasunin.

Brain Food

Research on eggplant has focused on an anthocyanin phytonutrient found in eggplant skin called nasunin. Nasunin is a potent antioxidant and free radical scavenger that has been shown to protect cell membranes from damage. In animal studies, nasunin has been found to protect the lipids (fats) in brain cell membranes. Cell membranes are almost entirely composed of lipids and are responsible for protecting the cell from free radicals, letting nutrients in and wastes out, and receiving instructions from messenger molecules that tell the cell which activities it should perform.

Rich in Phenolic Antioxidant Compounds

Researchers at the US Agricultural Service in Beltsville, Maryland, have found that eggplants are rich sources of phenolic compounds that function as antioxidants. Plants form such compounds to protect themselves against oxidative stress from exposure to the elements, as well as from infection by bacteria and fungi.

The good news concerning eggplant is that the predominant phenolic compound found in all varieties tested is chlorogenic acid, which is one of the most potent free radical scavengers found in plant tissues. Benefits attributed to chlorogenic acid include antimutagenic (anti-cancer), antimicrobial, anti-LDL (bad cholesterol) and antiviral activities.

Cardiovascular Health and Free Radical Protection

When laboratory animals with high cholesterol were given eggplant juice, their blood cholesterol, the cholesterol in their artery walls and the cholesterol in their aortas (the aorta is the artery that returns blood from the heart back into circulation into the body) was significantly reduced, while the walls of their blood vessels relaxed, improving blood flow. These positive effects were likely due not only to nasunin but also to several other terpene phytonutrients in eggplant.

Nasunin is not only a potent free-radical scavenger, but is also an iron chelator. Although iron is an essential nutrient and is necessary for oxygen transport, normal immune function and collagen synthesis, too much iron is not a good thing. Excess iron increases free radical production and is associated with an increased risk of heart disease and cancer. Menstruating women, who lose iron every month in their menstrual flow, are unlikely to be at risk, but in postmenopausal women and men, iron, which is not easily excreted, can accumulate. By chelating iron, nasunin lessens free radical formation with numerous beneficial results, including protecting blood cholesterol (which is also a type of lipid or fat) from peroxidation; preventing cellular damage that can promote cancer; and lessening free radical damage in joints, which is a primary factor in rheumatoid arthritis.

While often thought of as a vegetable and prepared like one, mushrooms are actually a fungus, a special type of living organism that has no roots, leaves, flowers or seeds. While mushroom can be cultivated, they can also be found growing wild in many regions of the world.

Mushrooms are so porous that if they are exposed to too much water, they will quickly absorb it and become soggy. Therefore, the best way to clean mushrooms without sacrificing their texture and taste is to clean them using minimal, if any, water. To do this, simply wipe them with a slightly damp paper towel or kitchen cloth. You could also use a mushroom brush, available at most kitchenware stores.

If using the whole mushroom in a recipe, simply slice off the very bottom of the stem, which is usually a bit spongy. If your recipe only calls for the caps, gently break off the stems with your hands and discard (or save for making soup stock).

Here’s an express serving idea called mushroom with turmeric powder and black pepper sauce that you could prepare at home:

Ingredients:

1 clove of roughly chopped garlic

1 bulb of medium size, roughly sliced onion

A handfull of cut, cleaned grey/white oyster mushroom

1 teaspoon of turmeric powder

2 tablespoon of black pepper sauce

Method:

1) Heat 2 tablespoon of oil in the pan.

2) Saute’ the garlic and onion till brown.

3) Add the white/grey mushroom. And cook it for 2 minutes.

4) Next, add the turmeric powder and mix them in the pan.

5) Then add the black pepper sauce and cook them for another 3 minutes

6) Season to taste and ready to be served.

Button mushrooms have grown wild since prehistoric times, having been consumed as food by the early hunter-gatherers. Since ancient times, mushrooms have been thought to have special powers. The Egyptians thought that they granted immortality, and since only the pharaohs were felt to be worthy of this gift, the common people were not even allowed to touch mushrooms, let alone eat them. In ancient Rome, people oftentimes referred to mushrooms as cibus diorum-food for the gods. The folklore of many cultures, including Russia, China and Mexico held that eating mushrooms could give someone superhuman strength.

Although button mushrooms have been enjoyed by people around the world for millennia, it was not until the 17th century that they began to be cultivated. The first attempts at cultivation began near Paris, a city that still has hundreds of miles of underground caves and tunnels where mushrooms are grown. Cultivation of button mushrooms began in the United States in the late 19th century. Button mushrooms are grown throughout many regions of the world, especially countries in the Northern Hemisphere. The United States is one of the leading commercial producers of button mushrooms with the majority being produced in Pennsylvania.

Among the health benefits of mushrooms are as a powerful phytonutrients in promoting optimal health, provide zinc for optimal immune function and serve as a protection against Alzheimer’s disease and age-related cognitive decline. Mushrooms are also found to be top food source of potent antioxidant.

The best way to store loose button mushrooms is to keep them in the refrigerator either placed in a loosely closed paper bag, wrapped in a damp cloth or laid out in a glass dish that is covered with a moist cloth. These methods will help them to preserve their moisture without becoming soggy and will keep them fresh for several days. Mushrooms that are purchased pre-packaged can be stored in the refrigerator for up to one week in their original container. Dried mushrooms should be stored in a tightly sealed container in either the refrigerator or freezer, where they will stay fresh for six months to one year.

Last but not least, remember to look for mushrooms that are firm, plump and clean. Those that are wrinkled or have wet slimy spots should be avoided. Since mushrooms darken as they age, choose those that are either creamy white or tan, depending upon whether you are purchasing white or Crimini mushrooms. Translation by Umm Hajar (ummhajar@gmail.com)

Thousands of miles away from Malaysia, I read the Malaysia newspaper daily and keep myself abreast on how the security of the Malaysians is turning into a menacing state. Major crimes are occurring in all places. There are homicides, rapes, aggravated burglaries, snatch thefts and various other crimes that pain us by just thinking about it.

In our country, a person is always in a state of anxiety or terror when he has to walk alone or carry precious items or own luxurious belongings or even to carry a bag around his shoulder for fear that it will jeopardize his life. One does not only fear for his safety while on the road but also when one is at home.

Parents are afraid to let their children to play out in their front yard and are even more reluctant of letting them to go further out to play with their friends. Criminals can be found everywhere with all their gruesome evil acts. Even worse, some of them may be defended by powerful lawyers in court. Political parties that are ‘power thirst’ will probably take the opportunity to defend criminals if they perceive the issue can be politicized.

We have lost the pleasure of having a serene life which we once enjoyed tremendously. Or probably Allah has purposely withdrawn His Blessing from us. This is the biggest calamity a nation has to ever endure. Among the reasons for it is because of the lacking in Al-Amr bi al-Ma’ruf Dan al-Nahy ‘An al-Munkar (inviting to all that is good, enjoining what is right and forbidding what is wrong).

This particular duty is profusely mentioned in the al-Quran and al-Sunnah. Among the verses is when Allah says (translated as):

“And the believers, men and women, are protectors one of another: They enjoin what is good, and forbid what is evil; they observe regular prayers, practice regular charity, and obey Allah and His Messenger. On them will Allah pour His Mercy: for Allah is Exalted In power and Most Wise.” (Surah al-Taubah: verse 71)

The word munkar (evil) is always narrowly interpreted by some of us as referring only to acts of adultery, alcohol consumption, gambling and others of same species. Because of that, only those who join the operation to inhibit these activities will feel that they are executing the religious duty.

At the same time, other kind of crimes such as drug abuse, robbery, hooliganism, vilification of others, illegal racing that endangers people’s life and other offenses are considered as common crimes that are not related to the religion. Therefore, the acts of inhibiting these crimes are not regarded as pious deeds commanded by the religion.

Probably, this is one of the drawbacks of constricting the functions of Shariah Court in our country. It causes the mosque congregation to feel that apprehending couples engaged in khalwat (close proximity) is a religious task but at the same time, they do not do anything to stop the youngsters from taking drugs or marijuana or destroying the public property.

A group of religious officers performing ‘khalwat snoop operation’ is seen as performing religious acts even though it contradicts the teachings of Islam. In the meantime, the task performed by the police or members of rukun tetangga (community center) to prevent crimes that ruin the community is deemed as ordinary tasks or social duties. They do not see it as executing the duty commanded by Allah and His Messenger.

Similarly, the definition of munkar used by many dakwah groups or Islamic organizations or religious orators is also limited. Without realizing it, this is one of the narrow Islamic understandings being adopted by the majority of us. We can identify this as one of the impacts of secular thinking our community is experiencing.

At times, when we leave one munkar unchecked, it will lead to another kind of munkar. For instance, we do not give enough attention to the issue of drug abuse involving the youngsters in our neighborhood. Probably, it is because we feel that it does not have anything to do with our life. In the end, because of their uncontrolled addiction, they turn into thieves and even murderers just like the recent tragedy that we have heard of.

We tolerate vandalism when it does not affect our property but in the end, the country suffers the loss and one day, we may become a victim. We do not criticize or protest the acts of ‘mat rempit’ but in the end, we or the ones we love will become their victims.

When Ibn ‘Abbas interpreted verse 25 in surah al-Anfal (translated as): “And fear tumult or oppression, which affect not in particular (only) those of you who do wrong: and know that Allah is strict in punishment” he said, “Allah commands the Believers to avoid accepting the acts of munkar among them for fear that Allah will punish all of them (because of that).” (Al-Tabari, Tafsir al-Tabari: Taqrib wa Tahdhib, 4/59, Damsyik: Dar al-Qalam)

The Messenger of Allah s.a.w once said:

“By Him in Whose Hand my soul is in, you must enjoin what is reputable and forbid what is disreputable or Allah will certainly send his punishment to you, then you will make supplication but will not receive an answer” (Reported by al-Tirmizi, ranked as sahih as al-Albani). Because of that, one who sees an act of munkar must stop it using means that is within his capability.

The Messenger of Allah s.a.w also said:

“He who amongst you sees something abominable should modify it with the help of his hand; and if he has not strength enough to do it, then he should do it with his tongue, and if he has not strength enough to do it, (even) then he should (abhor it) from his heart, and that is the least of faith.” (Reported by Muslim)

Most importantly, we must keep in mind that a government’s main function is to enjoin what is makruf (reputable) and forbid what is munkar as stated in Surah al-Hajj verse 41 (translated as): “(They are) those who, if we establish them in the land, establish regular prayer and give regular charity, enjoin the right and forbid wrong. And (remember) with Allah rests the end (and decision) of (all) affairs.”

If a government fails to enjoin the makruf and forbid the munkar in a broad and comprehensive sense then it means that the government has failed to function as required by Allah and His Messenger. Therefore, it is recommended that the government in our country run a campaign to prevent crimes from the perspective of Al-Amr bi al-Ma’ruf Dan al-Nahy ‘An al-Munkar as dictated by Islam.

The community, particularly the Muslim community, must be encouraged to perceive the undertaking attempted by the police and the volunteers among the community as a virtuous effort of executing the religious duty. For the sake of realizing the meaning of helping each other in forbidding the munkar, the rakyat should be educated to assist the police and this should in turn be driven by their religious awareness. At the same time, it is also a part of the government’s duties in this whole process to preserve the welfare of the members of the police force. This includes, among others, increment to their salaries and increase to their numbers.

Also, bear in mind that when the police’s reputation is tainted, that will lower the feeling of fear the criminals hold against the police. The community’s respect for the police too will erode. Therefore, the government must ensure that the trustworthiness of our police force is preserved and their independency is guaranteed.

It is most unfortunate if the police are too occupied with the nonsensical endeavors of the politicians whereas the community’s state of security is in trouble. Regrettably, political parties are so engaged in securing their respective seats that they forget to discourse the issues on people’s security that is getting more and more threatened by the increase in crime.

One important matter for us to be aware of is that crime is increasing because felons are no longer fearful of the authority or the existing criminal law and this may be caused by two factors. First is because the authority or the law enforcers are deemed unfit giving them the belief that the chance to dodge the penalty is wide. Second is because the existing law is not fear-provoking enough.

When Islam prescribes ‘hudud’, it is designed in such a way that it is very difficult for the accused to be convicted but its punishment is exceptionally frightening if convicted. In other words, only those who are guilty beyond the shadow of a doubt are punished and the punishment can really send a stern warning to the criminals and the criminal wannabes.

Yes, the method of punishment and its process of execution may be adjusted with the change in time and generation. Nevertheless, the authority must revert to the teachings of Islam in tackling crimes. Seminars and discussions on confronting crimes based on the teachings of Islam must be conducted in a serious manner. This is the duty of ‘enjoining the makruf and forbidding the munkar’ that is shouldered by the government. If that is not done, crimes will overcome the makruf in our country.

Zoo Melaka, about 3 hours drive away from Kuala Lumpur…is a perfect place for an express educational visit! Located strategically at Ayer Keroh (the Gateway to Melaka), the zoo is accessible to both incoming visitors off the highway and visitors from downtown Melaka. Entry to the zoo is only RM7 (adult) and RM4 (for children 5 to 12 years) and with more than 1,200 animals representing over 200 animal species, it is an ideal tourist destination as well as a learning centre for all walks of life.

Zoo Melaka was originally established by the Melaka State Government in 1963 atop 54 acres (21.2 ha) in Ayer Keroh as a fledgling tourist destination. In 1979, management of Zoo Melaka was transferred to the Department of Wildlife and National Parks (PERHILITAN) and officially opened to the public by previous Prime Minister of Malaysia, Tun Dr. Mahathir Mohamad on 13th August 1987. Since then, the Zoo has become a member of the South-East Asian Zoological Park Association (SEAZA) and an active member of the Malaysian Association of Zoological Parks and Aquaria (MAZPA).

Located approximately 13 km from Melaka city center, the Zoo progressed rapidly to become the second largest zoological park in the country. It was the first Zoo in the region, for example, to exhibit the critically endangered Sumatran Rhinoceros and Gaur. The Zoo is also renowned around the world for its Malayan Tiger captive breeding program. In tandem with global trends, Zoo Melaka has also adopted a more “Open Zoo” concept with its newer exhibits as it continuously upgrades its exhibits.

ZOOLOGY MUSEUM

Zoology Museum was inaugurated by Chief Minister of Melaka namely Yang Amat Berhormat Datuk Seri Mohamad Ali Bin Mohamad Rustam on 26 July 2003. Here there are variety of preserved animals in dry and wet shaped. Among them are tiger, elephant, puchong crocodile, snake and etc. Apart from that, we also provide information exhibition space as information reference for tourists. You also will have the opportunity to feel the atmosphere inside forest nocturnally when you enter night jungle. There are various kinds of wildlife inside night jungle such as tiger, snake, bat and others. We also provide natural sound effect of wildlife so that you can feel real jungle situation at night.

The establishment of Zoology Museum objective is to provide something different and as an attraction for visitor to visit Zoo Melaka. The concept are more focused on preserved animal, animals breeding process and information of surrounding animals. Establishment objective of zoology museum was to use wildlife collection in zoo for creating awareness purpose and convey importance conservation of biodiversity message, deliver knowledge to visitor about animals and give opportunity to visitors to see closely and detailed on animal which already been preserved.

Come face-to-face with one of the world’s most lethal predators: the Malayan Tiger! A modern RM2.8 million Big Cat Complex brings you up close and (almost) personal to several Malayan Tigers, some of which are reputed man-eaters. The Complex, built in 2006, also features the Clouded Leopard and Black Panther of Malaysia as well as the African Lion. The Complex offers visitors a closer look at the big cat’s enclosure through a glass panel or over and “Open Concept” water barrier. This is the flagship exhibit of Zoo Melaka.

Zoo Melaka has also recently re-designed and expanded it’s Reptile House to feature some of the largest contrictors in the world. These include the World’s Largest Snake Species: the Anaconda; the World’s Longest Snake Species: the Reticulated Pyhton of Malaysia and other beautiful snakes. These are the latest additions to join the Zoo’s caimans, iguanas and other reptiles. For more info…browse http://www.zoomelaka.gov.my/night/
